Bottled water - off the menu

‘In January 2008, my management and I at my restaurant, Billy Kwong, came to the same conclusion that we should take bottled water off the menu.
No one has been bothered by it, it’s an obvious step. We simply just offer filtered water to our customers. Sydney water is absolutely fine – and it’s virtually free.
Bottled water damages our environment and costs consumers. Removing bottled water is part of our commitment to sustainability and ethical eating – we are proud to be the first carbon neutral restaurant in NSW.”
As a restaurateur and food spokesperson I feel a deep sense of responsibility toward the community regarding the choices I make. Our guiding philosophy at Billy Kwong is:
'To leave as small and light an environmental footprint as possible, to give back to the community whenever and wherever we can, and to think globally and act locally.'
Moving away from the wasteful use of bottled water is one small step towards putting this philosophy into practice.
